Distinct spice, earthy, onion, garlic and citrus (pink grapefruit, orange and tangerine) notes, Summit has found utilization mainly as a bittering hop. Overuse of the hop typically will enhance the garlic and onion characteristics. A very high alpha acid hop, Summit hops are often utilized in IPA, Imperial IPA, and Pale Ale styles. With flavors and aromas of pepper, sulfur, gooseberry, wild garlic, incense and aniseed, Summit may be used as a late edition hop in moderate quantities.
